FLAMIN' HOT CHEETO RICE

Ingredients
- 2 cups cooked (Not So) Boring rice
- 1.5 cups Flamin' Hot Cheetos, crushed
- 3 tablespoons cream cheese, softened
- 1 tablespoon lime juice
- 0.5 teaspoons garlic powder
- 1 cup shredded rotisserie chicken
- 0.5 cups shredded Mexican cheese blend
- 2 scallions, sliced
- 2 tablespoons sour cream, for topping
- 0.5 cups whole Flamin' Hot Cheetos, for topping
Steps
- Make the Cheeto dust sauce: Crush 1.5 cups Flamin' Hot Cheetos into a fine powder. Mix with 3 tablespoons softened cream cheese, 1 tablespoon lime juice, and 0.5 teaspoons garlic powder until you have a paste.
- Cook the rice into the sauce: In a skillet over medium heat, add 2 cups cooked (Not So) Boring rice and the Cheeto paste. Toss to coat completely — the rice will turn bright red-orange. Cook 3 minutes until everything is hot and slightly sticky.
- Add the chicken and cheese: Fold in 1 cup shredded rotisserie chicken and 0.5 cups shredded Mexican cheese blend. Keep tossing until the cheese melts and everything is combined. Press flat and let it get a little crispy on the bottom.
- Plate it: Scoop into a bowl. Top with 2 tablespoons sour cream, sliced scallions, and pile whole Flamin' Hot Cheetos on top right before serving.
Notes: The color alone will stop the scroll. This actually tastes like spicy mac and cheese vibes. Garnish with a neat row of whole Cheetos for the thumbnail.
